Ethiopian Split Pea Stew | High Protein Vegan

Ingredients:

  • 100g dry split peas (soaked for at least 2 hours, then drained)
  • 1/2 white onion
  • 1/2 red onion
  • 2 teaspoons minced ginger
  • 2-3 mushrooms
  • 1/4 red pepper (optional)
  • Handful of spinach (optional)
  • 1 teaspoon garlic
  • 1/3 teaspoon turmeric
  • Salt and pepper to taste
  • 300ml water

Method:

  1. Steam fry all vegetables, except the spinach, and the ginger for around 10 minutes
  2. Add spices and cook for a further minute
  3. Add the water and split peas, bring to the boil
  4. Then reduce to a simmer, cover the pot and cook for 35-45 minutes. Add more water if necessary 
  5. 5 minutes before the end add the spinach
  6. Enjoy :)
