Delicious Lentil And Mushroom Burgers

DELICIOUS vegan muscle building fuel!



  • 2 tbsp chia seeds
  • 6 tbsp warm water
  • med onion
  • 175g mushrooms
  • 170g dry or 420g cooked lentils (green or brown)
  • 35g oats
  • 2 tbsp potato starch or cornflour
  • 1 tbsp soy sauce
  • 1 tbsp tomato paste
  • 1/2 tsp dried oregano
  • 1/2 tsp dried basil
  • 1/2 tsp smoked paprika
  • 1/4 tsp dried thyme
  • 1 tsp garlic powder
  • Salt & pepper to taste


1. Mix the chia seeds and warm water in a bowl and set aside
2. Chop the onion
3. Heat a non-stick pan over a medium high heat
4. Add the onions and cook until they begin to brown, adding a splash of water if they begin to stick
5. Place the mushrooms into a food processor and pulse until finely minced
6. Stir the mushrooms into the onions, cover and cook until the mushrooms soften (about 2 mins)
7. Add the garlic and cook for a further minute
8. Transfer the mixture to a food processor and add the lentils
9. Pulse until the lentils are just combined with the mushrooms
10. Add all remaining ingredients and pulse to combine well
11. Scrape the mixture into a bowl and set aside for 15mins
12. Pre-heat the oven to 190 degrees celcius (375f)
13. Line 2 baking trays with parchment paper
14. Shape the burger mixture into thin patties
15. Place them on the prepared trays and bake for 30mins (no need to flip them).
