Servings: 1
Macros (per serving)
423kcal, protein 29g, carbs 45g, fat 9g
EQUIPMENT NEEDED
INgredients
100g frozen spinach
½ medium onion
5 medium mushrooms
½ teaspoon cumin powder
½ teaspoon chili powder OR chili flakes
½ teaspoon garlic powder
½ teaspoon ginger powder
½ teaspoon turmeric
½ teaspoon garam masala
¼ teaspoon cinnamon
Handful fresh coriander
80g silken tofu
60ml water
1 can chickpeas, drained and rinsed (240g drained)
1 tablespoon lemon juice
salt to taste
Instructions
Cover the frozen spinach in boiled water and set aside for 5 minutes.
Finely slice your onions and mushrooms. Add them to your pan and steam fry for 5 minutes.
Add in the cumin, chilli, garlic, ginger, turmeric, garam masala and cinnamon and cook for a further 2 minutes.
Drain the spinach and add it to a blender along with the fresh coriander, silken tofu and 60ml water. Blend until completely smooth.
Add your sauce mixture to the pan along with the chickpeas and salt and cook for 3 minutes.
Finally, stir in the lemon juice and serve with rice.
