Unlocking the Power of Plants: Sulforaphane Edition

Sulforaphane is a phenolic phytonutrient with beneficial antioxidative properties, sounds fancy right?

To put it simply, sulforaphane is a compound that can be obtained from consuming all cruciferous vegetables - we’re talking about kale, cabbage, cauliflower and most importantly broccoli, as this is the best source of this powerful nutrient!

How Does it Work?

When you chop up or chew these nutritional powerhouses raw, a special enzyme called myrosinase is released and gets to work. Myrosinase then transforms a compound called glucoraphanin into sulforaphane – a true superhero for your cells! This powerful compound then sparks a chain reaction within your body. It sends signals to your cells, activating a range of crucial protective mechanisms that bolster your defences against potential threats.

Heating broccoli destorys the enzyme that produces sulforaphane. But don’t worry, the good news is there’s a few ways you can be sure you’re not missing out!

  • Prep your cruciferous veggies by chopping them 40 mins before cooking to allow the myrosinase enzyme to get to work.

  • Mustard Powder contains the myrosinase so add a small amount (½ teaspoon) of mustard powder to cooked broccoli.

  • Serve cooked cruciferous vegetables with additional raw crucifers if you don’t have time to pre-chop. I often use red cabbage as a garnish.
